How to make an amazing pot of Oxtail Stew in your slow cooker!
Hey friends!In this post I’m going to show you how I make the best homemade oxtail stew. I’ll be cooking it in my slow cooker, which means it’s a super easy recipe!I will gather up all of my ingredients, then let the stew cook low and slow for 10hours.Let’s get started!
How to Make Slow Cooked Oxtail Stew
When I make stews it’s usually when I’m trying to clean out my refrigerator and freezer. With that being said, I like to use whatever I have on hand! At the time that I made this stew I had a ton of grape tomatoes on hand. I simply threw them into my food processor, and pulsed them a few times, and used them instead of my usual canned crushed tomatoes.In my freezer I had some frozen potatoes, a bag of onions & peppers, and lots of frozen carrots. I used them!
As far as oxtails, I had them in my freezer too! LOL. The oxtails that I used had a minimum amount of fat on them. If your oxtails have a lot of fat, be sure trim them.
You will notice that I didn’t add any salt to my stew, but you can add it to yours. If you noticed, I’ve been skipping out / or cutting down on sodium when it comes to cooking simply because it’s my preference.High blood pressure runs in my (and my husband’s) family, so I try my best to stay away from salt as much as possible these days! I thought that I’d address that because I’ve been getting asked about it a lot lately. 🙂
Instead of using salt I use Mrs. Dash original seasoning. You can use regular salt or seasoning salt if you choose.

Slow Cooked Oxtail Stew
This slow cooker oxtail stew is a great catch-all for leftover veggies you need to use up! Tender oxtails slow-cooked in a hearty stew gives this recipe warmth and tons of flavor. It's a perfect winter stew.

Ingredients
- 2 lbs of oxtails
- 1 1/2 cup frozen carrots
- 1 1/2 frozen onion & peppers
- 2 cups chopped celery
- 2 cups small potatoes I used red, purple, golden
- 4 – 5 cloves of garlic
- 3 bay leaves
- 2 1/2 cups crushed tomatoes
- 1 1/2 tsp crushed basil
- 2 tbsp salt free seasoning
- 1 tbsp onion powder
- 2 tbsp brown sugar
- 4 cups water
Instructions
Toss in the celery, onions & peppers, and carrots into the slow cooker,
Next add in the potatoes, then the oxtails.
Pour the crush tomatoes in, then sprinkle the basil, salt free seasoning, onion powder, and brown sugar.
Toss in the bay leaves, then pour in 4 cups of water.
Cover the slow cooker with the lid, and let it cook on LOW for 10 hours.
