HOW MANY Net Carb per peanut butter ball
2 Net CarbsÂfor one keto peanut butter ball.ÂI will say that while these Low Carb Power Balls are very good and very filling, they do leave you a little thirsty due to the protein powder.

Ingredients
- 1 cup peanut butter no sugar added
- 1 cup chocolate protein powder
- 1 cup low carb chocolate
US Customary - Metric
Instructions
In a medium mixing bowl, combine the protein powder and peanut butter. Stir until you can knead with your hands without the peanut butter sticking to you. It will turn into a play dough-like consistency. You should have a clean bowl when you are done mixing.
Ball up the dough into balls that are about 1 rounded teaspoon in size.
Freeze for 2 hours.
Line cookie sheet with parchment paper (not wax paper, they are not the same thing.)
Melt your chocolate in the microwave for 1 minute. Stir. If not completely melted, return to the microwave for 30 seconds. Stir and repeat until chocolate is completely melted. Stirring is critical to know when the chocolate is really melted. If you don't stir, you will burn your chocolate.
Dip each ball into the melted chocolate and place on a cookie sheet. Return to the freezer until the chocolate hardens.
Transfer to a food-safe storage container and keep in the fridge for up to 2 weeks.

Do they melt? Can i carry them around in my bag for school?

Lindsay says
yes, just like any chocolate if its not chilled and sitting in a warm lunch bag it most likely will melt a bit. Just depends on the climate you live in.

These sound amazing! I am allergic to peanut butter so I will use almond butter instead. Thank you so much.

Yes you can DEFINITELY use almond butter instead. Really any other nut butter will work. 🙂

So these have no sweetener in them? Stevia? Xylitol? Thx. Can u add these?

Lindsay says
Yes of course. If you want a bit of extra sweetness you are more than welcome to add it. The sweetness in the chocolate for us is enough to satisfy.

Hello,
See AlsoEasy Lemon Curd RecipeI was wondering if using vanilla protein powder would make an awful lot of difference? Or does chocolate powder just taste better with these?
Thanks!

Maria – I’m sure you could do it and it would work just fine. But the flavor would definitely be different. Maybe try mixing in a bit of unsweetened coco powder? Just don’t increase the overall measurement of the dry powder. You’d have to combine them. Although I should mention I have not tried this. It’s just a guess.

Hi Tiffany – this recipe looks yum! What sort of protein powder did you use? I have both whey and pea/rice protein (carbs are about the same in each). Thanks!

Jessica – I mentioned it under “Products Used”. I linked it directly to Amazon. That way you can read the full description there. Whey is always good with these sorts of things. I think rice powder is typically much more grainy and won’t give you quite the same texture. Just a guess though as I haven’t tried it.

Can I use PB2 instead of protein powder? Same amount?

Diane – I’ve never used PB2. I’ve heard of it, but have never tried it so I can’t say for sure. Isn’t it a powder?

Can you sub Jay Robb’s Egg White Powder for the Protein Powder? Thanks.

That's Low Carb!?! says
Penny – In theory, yes. I just find that that particular powder is very salty, so I’m not sure how that will affect the flavor. But it should function about the same, yes.

I don’t use protein powder. What can I substitute in this recipe?
Reply
-
That's Low Carb!?! says
Loanne – This recipe was developed to use protein powder. I’m not sure that there really is a good substitute in this particular instance only because it’s such a major part of the recipe. I’ll do a little research to see if I can find anything, but I’m thinking a different recipe might be a better option. I’ll see if I can come up with one. 🙂

Excited to try these…..it doesn’t seem to matter what I do I crave a pop of chocolate after dinner. Quick question, I have some vanilla protein powder on hand I need to use up. How much do you think that’d mess with the taste? Should I maybe add some cocoa powder to the PP? Thanks for your recipes!

That's Low Carb!?! says
Allison – I think you’ll be okay. If you do want that extra chocolate flavor, I would back off of the protein powder by about 1 tbsp. and then add 1 tbsp. of unsweetened cocoa powder. Let me know how it turns out!

Where did you buy the peanut butter without sugar in it? and what’s the name of chocolate you used and where did you buy it? I am diabetic. Thanks so much. Shirley

What kind of peanut butter did you use for these?
Reply

That's Low Carb!?! says
Anjala – As long as there is no sugar added (just peanuts and salt in the ingredient list), it really doesn’t matter. You can do crunchy or creamy, whichever you prefer. I used creamy simply because I like the texture better.
