This easy almond butter recipe is a great way to ensure you’re incorporating whole foods into your diet without a lot of fillers. Finding an almond butter that isn’t filled with ingredients other than almonds is getting harder and harder. To make matters worse, because of the growing demand for almond butter, the supermarkets in our area are often out of stock; and when they do have almond butter in stock the cost is outrageous.

I made this homemade almond butter recipe for $2.50, plus the cost of electricity. Can’t beat that with a stick!

This almond butter recipe is easy!

The first step is getting your almonds ready. Roasting raw almonds at home is easy, and takes about 10 minutes in a preheated 350° oven. Pour two cups of raw almonds onto a baking sheet and pop them into the oven while you set up your food processor. I keep my KitchenAid food processor on the counter, so my set up was quick – just adding the blade to the bowl.

If you’ve never roasted almonds before, you’ll know they are ready by the amazing smell that permeates your kitchen. It should smell very almondy. Visually, the almonds should be golden brown. Once your almonds are roasted, pour them into the bowl of your food processor.

This is where you’ll need your patience. After about five minutes in the food processor, it will look like this:

This is almond flour. It’s great for breading chicken and baking. In fact, many people following a Paleo lifestyle, make their own almond flour. But today, we’re not making almond flour. Turn your food processor on again and let it process for a long time. Nearly ten minutes later, I saw the first signs of my almond butter coming together. It was finally starting to get creamy.

You need patience more than anything to make almond butter. Another ten minutes goes by, and I finally have gorgeous almond butter!

Spoon it into a mason jar and store in the refrigerator. Isn’t it beautiful? It is so creamy. And delicious.

It tastes amazing on crackers, sandwiches, and in smoothies.

And right off a spoon. That’s really the best way.

      The shelf life is about one day in our house, it is so good it hardly lasts! This recipe makes one cup, it should store in the refrigerator tightly sealed for 7 – 10 days.

      Hi Sammi – I made this using a KitchenAid 7 cup food processor. I’m not familiar with a Ninja chopper, so I can’t speak to the durability of the motor.

    I have recently read that roasted almonds are not as healthy for you because the roasting creates a chemical change in them that can contribute to health issues like cancer. How would this taste with not roasting the almonds? And would it work if you soak the almonds in order for the body to more readily absorb the nutrients & digest them? Thanks!

      I’m not sure how it would taste if you didn’t roast the almonds or if it would work to soak the almonds first. My initial thoughts on the soaking was that it might yield a creamier almond butter. I’ve soaked cashews before and used them in a cream sauce, I suppose it might work for an almond butter as well. If you give it a try, let me know how it turns out.
