- Using a rubber spatula (because the dough is sticky) and a rolling pin I formed the dough into an oblong shape and rolled the dough starting from the outside edges and rolling towards the middle. This formed the classic biscotti oblong shape.

First, get prepped. Preheat your oven to 350 degrees Fahrenheit. Lightly grease one large cookie sheet orBiscotti Pan. You will also want to gather your ingredients and measure them out.
In a mixing bowl, beat the butter, sugar, salt, vanilla, and baking powder until the mixture is smooth.

Next, beat in the eggs. The batter may look curdled. Put your mixer on low speed and add the flour, stirring until smooth.

- The shape you want is a rectangle with rounded corners. With the dough slightly higher down the middle. Like a little hill.
- The dough is sticky so I use a rolling pin and a rubber spatula.
- With the rubber spatula, I keep the rectangle sides straight. I use the rolling pin to smooth out the dough starting from the outside working in. This pushes the dough to the center to create the little hill.
