Welcome to my Whole 30 garlic butter pork chops in the Airfryer. Jump in on this delicious quick lunch recipe.

Succulent pork chops with a garlic butter marinade, served with a fresh tomato salad.

Last week we got our new Airfryer and upgraded from our old rusty one that was six years old and swapped it for this XL version.

This meant that we were testing loads of new and exciting recipes and seeing how well it was going to perform.

In reality when looking at it, it really doesn’t look that big, but the volume of food it can cook is genius as well as it now being digital, which is weird when it is talking back to us.

But on our first full week with it we had just come back from the supermarket. We were doing our Whole 30 (it was day 11 at the time) and we tortured ourselves by walking past loads of chocolate and not been able to buy any.

We would also normally buy some special offer meat but there just wasn’t any to be had for lunch.

In the end we opted for a big pack of pork chops. They are very popular here in Portugal as pork (or porco as they call it in Portuguese) is the local obsession.

It is used in sandwiches (known as Bifanas), in pork roast dinners, in casseroles and the list goes on and on.

Personally, I love it cooked in a shallow frying pan with a garlic butter and as I looked at it I just wondered….how it would taste in the Airfryer?

After all I cooked nearly everything else in it and if you can cook a whole chicken in one, then how about some yummy pork chops?

So heat up your Airfryer and get ready for pork chops airfryer style with a delicious garlic butter marinade that is just perfect for the Whole 30. Then load it up with a big garden salad and then you have LUNCH!

Instructions

  • Preheat the Airfryer to 175c.

  • In a mixing bowl add together all the seasonings, the coconut oil and butter and the garlic.

  • Rub the mixture into both sides of the pork chops and seal in silver foil and fridge for an hour.

  • Remove them from the silver foil and if there is any spare marinade in the silver foil then rub it over the chops.

  • Place them on the grill pan inside of the Airfryer and cook for 7 minutes on one side and then 8 minutes on another.

  • Serve with a garden salad and drizzle with some extra olive oil.

Notes

My favourite salad marinade is to mix a tablespoon of white wine vinegar with the same amount in olive oil and then add a pinch of mustard. It is delicious for when you are on the Whole 30 and are missing your dressings.

My pork chops are thicker than most, remember to adjust your time if yours is smaller/bigger.

Whole 30 Day 16

I am back with my day 16 on the Whole 30. Its now that point where you have passed the halfway point and you start thinking about your favourite none Whole 30 food less and less.

I compare it with bereavement at first you think about it all the time, then as the days pass you by you think about it less and less, until the point comes when you rarely think about it.

I would say both can be the same as far as your thoughts are concerned. You start off by thinking you could never live without it and it enters you head every couple of minutes, then its every hour and before you know it you have suddenly gone six hours without it entering your head.

Here I am at day 16 and it feels just like that.

I would think about cheese constantly and how I think about it once a day and then the thought then does pass.

What I ATE On Day SIXTEEN Of The Whole 30

Today has been heavenly in the food stakes. I have also found that I am getting into a habit of eating loads of similar foods and falling madly in love with them.

When you’re on the Whole 30 it doesn’t have to be a case of loads of new recipes, you can have firm favourites that you can eat time after time.

Breakfast = Pumpkin Salad

Lunch = Steak & Chips & Salad & Sauce

Dinner = Pork Chops & Salad

Exercise = 5km Country Walk/Run

For breakfast today I have got back into my old Paleo habits that I had a few years ago and that is salad for breakfast.

It is a great start to the day and you can load it up with whatever you are in the mood for. Today it was pumpkin wedges over a salad.

Then for lunch it was steak, chips, salad and sauce. We all love steak and chips and remember it is Whole 30 compliant and so good! Especially if you make a delicious sauce to go with it.

For dinner today we had the recipe above and pork chops are just so good when they’re cooked in the Airfryer and are a true must have.

How Much Does The Whole 30 Cost?

The thing I want to discuss today is the cost involved in the Whole 30. As it really makes me mad peoples opinions of the Whole 30 and Paleo and that it will break the bank.

I had a website once that I used to manage that was based upon Paleo.

I pointed out to the owner that his site would be a lot more authentic if he followed the Whole 30 or Paleo and he pointed out that it was way too expensive and he never bothered. But what I told him and what I tell other people is that:

When you follow the Whole 30 Challenge you give up:

  • Cheese
  • Lots of dairy
  • Processed foods
  • Beans & lentils
  • Chocolate consumption

But you gain:

  • More meat
  • Better fats

Some foods stay the same:

  • Fruit & Vegetables
  • Eggs
  • Fish

Money savings

  • Save money by using leftovers for the next meal
  • Takeaways are cancelled for homemade versions

Food for thought:

When you think about it the average family spends 50€ a month on processed foods such as crisps, chocolate, yoghurts, sauces and ready meals.

If you are just spending more on meat and in season healthy foods, in the long run you will be better off financially, especially if you buy a lot of branded goods.

I also suggest that for fun you do a price comparison as it is great fun to see how much you save while doing the Whole 30.

The thing I want to discuss today is making use of our leftover vegetables. We all waste way too much food and its so sad when you read about how much food is wasted and then ends up sat in landfills.

This infographic is rather scary, informing you on the reality that we live with:

But the Whole 30 is absolutely fantastic for combatting food waste and making sure you make the most out of everything you buy.

If you buy a butternut squash for example it can be used in multiple meals, then make a bigger main meal and then the remainders is placed in the fridge and then heated up for breakfast.

We do this with vegetables. We will steam extra vegetables and then put the rest in the fridge and they can then be used for muffins like these ones. It then makes a quick and simple meal when you want something fast.

Though sometimes you will find, if you do the Whole 30, that you cook so much more vegetables than what you used to that you will end up running out mid week and then need to go and buy some more.

Typical 1-inch-thick pork chops in the air fryer take about 12-14 minutes to cook. Thinner ones will cook more quickly. There's also a difference between boneless and bone-in cuts — on average, air fryer boneless pork chops will cook 1-2 minutes faster than bone-in.

Can you put raw pork in an air fryer? ›

It is safe to cook raw meat in the air fryer if it is fully defrosted, seasoned, and monitored. Some fully cooked foods, including chicken tenders or fries, can be placed frozen in the air fryer.
