Jackfruit is an amazing fruit grown in parts of Asia and Africa. It is widely used as a fruit but is very popular in cooking as well, especially among vegans. The vegan diet prefers using jackfruit as its texture is similar to meat. Therefore, it is a good replacement for meat. Jackfruit has a flavor similar to tropical fruits like mango and pineapple. As much as it is tasteful, it is widely used in savory dishes as well.

Health benefits of jackfruit

Jackfruit is not just tasteful and versatile but is also loaded with nutrients and is very beneficial for our health and body. Here are a few notable benefits of eating jackfruit:

  • Jackfruit is rich in vitamin A and vitamin C. as a result, and it helps in improving your immunity.
  • It is rich in antioxidants which fight against the free radicals in the body. As a result, it protects your body from chronic diseases like cancer.
  • Because it is rich in vitamin C and antioxidants, it is known to prevent skin-related issues and improve the overall health of your skin.
  • It is a rich source of fiber, potassium, and antioxidants. Therefore, it protects your heart against diseases.
  • Jackfruit also contains anti-inflammatory properties.

Here is a list of everything you will need to make this delicious vegan jackfruit curry:

  • Coconut oil: I have used coconut oil for this recipe. However, you can choose any other vegetable oil. Olive oil or canola oil works well as well.
  • Green jackfruit: Green jackfruit is an amazing fruit. It is usually found in Asian and South Asian lands. Fresh jackfruit is green in color and has a flavor similar to mango. Finding green jackfruit in the U.S. can be a difficult thing. But you can find it in the canned version as well. So, don’t get sad if you can’t find it at the farmer’s market. You can easily buy it in cans at your local grocery store.
  • Sweet potatoes: The next main ingredient of this curry is sweet potato. It is a nutrient-rich vegetable and has a sweet yet savory flavor. Sweet potatoes add flavor and texture to this curry and make it even more tasteful.
  • Onion: Make the base of this curry using onions. You can use red, white, or yellow onions for this recipe.
  • Garlic: Garlic is a must ingredient in curries. Its deep savory flavor makes the curry tasteful.
  • Ginger: Ginger is not just a healthy ingredient. It also offers a slightly sweet yet peppery flavor which is surprisingly refreshing.
  • Thai red curry paste: Thai red curry paste is a versatile yet magical ingredient. It is a blend of different spices like shrimp paste, lemongrass, garlic, red chili peppers, turmeric, and salt. This paste is red in color and has a savory and spicy flavor. It is often a compulsory ingredient in Thai curries. The curry paste has a moderately spicy flavor and makes the curry very tasteful.
  • Coconut sugar: Adding coconut sugar to this curry will balance out the spicy flavor of the curry paste. You can use cane sugar instead of coconut sugar s well.
  • Coconut milk: Coconut milk is an essential ingredient in curries. Its rich and creamy texture makes the curry thick and tasteful.
  • Vegetable broth: Use vegetable broth instead of water to give the curry consistency and flavor. You can use vegetable bouillon in water instead of vegetable broth as well.
  • Thai basil leaves: Thai basil is yet another ingredient found in south Asian lands. It is widely used in Thai cuisine. Thai basil has a spicy flavor that is slightly different from the regular one. You can use regular basil if you can’t use Thai basil.
  • Salt: Season the curry with salt according to your liking to balance out the flavors.

How to make jackfruit curry?

Here are a few simple steps that you have to follow to make delicious jackfruit curry:

Step 1: First of all, prepare the jackfruit and sweet potatoes. Start by draining the canned jackfruit and cutting it into pieces. Similarly, wash and scrub the sweet potatoes, peel the skin, and cut them into equal cubes.

Step 2: Heat coconut in a saucepan over medium heat. Once the oil heats up, cook for about 3 minutes or until they are soft and translucent.

Step 3: Now, add garlic and ginger and cook for 45 seconds until fragrant.

Step 4: Next, stir in red curry paste, sugar, sweet potatoes, and jackfruit. Mix well so that the paste coats the vegetables and let it cook for 2 to 3 minutes.

Step 5: Pour in vegetable broth and coconut milk. Mix well.

Step 6: Bring the mixture to a boil and reduce heat. Let the curry simmer for about 20 minutes or until the vegetables are cooked and you get the desired consistency.

Step 7: Take the saucepan off the heat and add chopped Thai basil leaves. Mix well and serve. Enjoy!

Tips to remember

Keep these few points in mind when making this jackfruit curry:

  • You can add more vegetables like green bell pepper or carrots to this recipe for more texture and flavor. Add spinach, and it will taste good as well.
  • Suppose you don’t want to use sweet potato, no problem! Use regular potatoes instead.
  • For more texture, add cooked chickpeas to this curry. You can use any other beans as well.
  • Always use full-fat coconut milk. It is a key to creamy and rich curry.
  • Jackfruit tends to cook faster, so keep an eye on it. Make sure you dice them in even pieces. Also, don’t cut them into small pieces as they will cook faster, and the chances of overcooking them will greatly increase.

Jackfruit curry is versatile, and you can serve it with a number of sides. Here are a few to name:

  • Rice: whether it is white basmati rice or brown rice, this curry tastes perfect with either. Moreover, you can serve it with cumin rice or garlic rice as well. The combination of curry and rice is evergreen either way.
  • Quinoa: Serve this curry with quinoa for a more healthy option. Quinoa’s texture goes well with this curry.
  • Flatbread: Like any other curry, you can serve this one with flatbread. Moreover, you can also serve it with homemade naan or your favorite loaf of bread.

How to store jackfruit curry?

Place the leftover curry in the refrigerator for up to 3 days. It will get a bit thicker in the refrigerator so when you reheat it, add a splash of water.

Most people ask if you can freeze this curry. The answer is yes. Place it in a freezer-safe container and freeze for up to a month. Reheat over the stovetop by thawing it first.

Ingredients

  • 2 tablespoons coconut oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 4 tablespoons Thai red curry paste
  • 1 teaspoon coconut sugar
  • 1 20-ounce can green jackfruit, drained
  • 2 cups sweet potatoes, peeled and cut into chunks
  • 1 13.5-ounce canned coconut milk
  • 3/4 cup vegetable broth
  • 1/4 cup Thai basil leaves, chopped
  • 1/2-3/4 teaspoon salt

Instructions

  1. Drain jackfruit and cut in chunks. Heat oil in medium saucepan over medium heat. Add onions and saute until soft, about 3 minutes. Add garlic and ginger and cook stirring for 1 minute.
  2. Add red curry paste, sugar, jackfruit and sweet potatoes, cook stirring constantly to coat, about 3 minutes.
  3. Add coconut milk and vegetable broth. Bring to a boil, reduce to simmer for about 20 minutes until vegetables are tender.
  4. Remove from heat and stir in basil leaves. Serve immediately!

    Hello Michelle,
    Want to make this delicious curry for my granddaughter who is a vegan…but how can this dish be made with the paste as ít contains shrimp. Cañ the powder be used instead and how much do I use please?

      there is a vegan version of the paste. you can also try making ur own vegan version at home. but if all u have is the powder then i would add like 1~2 tbsp and then add more if necessary.

    Hello Michelle,

    I made this wonderful recipe last week and it has the BEST taste and smooth flavor. I did not have quite enough of the thai paste, next time I will be buying a much larger jar. Your recipes are so good and really full of robust flavor. I made two other of your recipes too. I will comment soon on their particular page(s) today. Again EXCELLENT !!
