How To Freeze Mango Puree / Mango Puree Recipe

Freezing Mango Puree / mango pulp is the best way to preserve fresh mangoes and use them later when mangoes are not in season. Mangoes are in season, so what are you waiting for?? Stock your freezer with homemade mango puree.
Recently, I saw a pack of mango puree /pulp in the supermarket and was astonished to find that a litre of it costs about $13 (about Rs 750) .....can you believe 750 Rs for a can of mango puree....Here in Kerala, Mango trees adorn most backyards, parks....and 1 kg of good quality mangoes cost anywhere between 40 to 60 Rs only and the fact that I have been doing this from such a long time....and when I saw the price tag on the mango puree can, I knew I had to share this.....so that you can save some money and preserve mangoes for longer time....and make mango ice cubes, mango ice cream, mango milkshake...
I made this mango puree with 2 kilo of fresh ripened mangoes and got 1 liter of puree......what you see in the container is the result of 2 kilos of pureed mangoes....pure, fresh, and no preservatives, or color added....and the best part is it can be FREEZED!! Do I need to tell you how to use them up??

Preparation Time: 10-15 min.
Ingredients:
Mangoes: Any good quality fleshy type, 2 kilos.
Sugar: 2 cups (I used 200 ml cup).
Method:
Peel and slice the mangoes.
Put them in a blender. Top with sugar.
Blend for 2 to 3 minutes. Pour into clean and dry containers or Ziploc....Label and freeze.
So easy!! and you can save money and have mangoes when not in season...how cool is this?
Tips:
After washing the mangoes, pat dry them with a kitchen towel, so that there wont be any water. Same with the containers.
If using Ziploc bags, squeeze out any air from bags and seal tightly.

I love to freeze mango too, but usually just in chunks..very much like I did with bananas. Is it necessary to add sugar or just for the taste?

Angie, sugar is added to improve flavor and help stabilize color.....since I use this mainly for desserts, cocktails, and drinks.......this works perfect! And yes, you can make without sugar. Thank you Angie for stopping by :)

Also, with sugar it is less likely to brown and have freezer burn.

can puree be frozen in bulk as shown in picture or individual serve portions.
I do not have so many small containers, so thought of freezing in large plastic jar. But my one time use is only about 3-4 spoons - only for 1 person.Alternatively, would it be advisable to store one time serving in polythene packets and put many packets in a large box)
I am based in Delhi, and mango season is just about to get over.

Hi, about your query, the amount I got is around 1 liter and I had stacked 4 containers like this and as of now I have just one more left. You can use Ziploc bags of half liter if you prefer. You can just scoop out the frozen mango puree with a sturdy spoon and use....hope this helps.

thanks so much for your reply. I will now tomorrow morning pulp out or cut in pieces about 12-15 kgs of mangoes. Some were of low quality little spoilt, but that portion can easily be thrown out. Still I will have
good portion left. I wold put some in a large freezer proof container and some in plastic packets (I do not have ziplock packets and don't want to delay as mangoes could get spoilt - I don't even have space n the fridge and all are lying in the room.can same be done with just mango 2-3 pieces / chunks. put in a freezer safe container and take out with a sturdy spoon and put back the container back in freezer.
Also, pl can you guide me, what is difference in deep freezer and freezer. I just have a double door fridge and the freezer space is not much. I was thinking to get hold of a second hand deep freezer or freezer as sometimes, I can manage to get some fruits at very low prices at wholesale markets and it may be good idea to freeze for later use.
Shall be obliged if you could also guide me about freezing apples. Or any other way to preserve apples. Making jam, kills the nutrients of the fruit - No ?

Hi Manisha, I have replied to your mail and I hope I could clear all your queries.
Regarding deep freezer, I dont have much idea about it...why dont you just google a bit on that?
You can use clean plastic packet, but make sure you tight it securely and remove the air before tying.
I think pureeing or making jams or sun drying are the best ways to preserve fruit.

Pidiyum kozhiyum or kottayam style pidi is a traditional knanaya cuisine ; these rice dumpling have a thick gravy like sauce, unlike the dry versions of Malabar kakka roti or kozhi pidi. Knanaya style pidi is served with varutharacha kozhi curry. Traditionally, pidi is associated with baby shower ie when the daughter-in-law is sent to her parents house for delivery, it is customary for the mother-in-law to make kozhi pidi and we knanaya people still follow these traditions. My main aim is to preserve this recipe; so that the future generations can enjoy this wholesome dish. Pidi is rice dumplings which is simmered in water along with shallots, garlic, curry leaves, and coriander seeds; but I have used coriander powder instead to make the whole process easy. Amma mentioned that if using coriander seeds then; the water used to mix the rice flour should be sieved and that using fresh roasted coriander powder saves time.
