Almost every weekend we have pancakes or waffles for breakfast.We stay in our pjs, watch the sun come up outside of our breakfast nook, and enjoy these chocolatey waffles! Surprise! These happen to be packed with nutritious ingredients. And while we love having these on any random weekend, they make for an especially yummy breakfast on a holiday or birthday—even more so if your kids love chocolate!
These waffles mix up in one bowl and are naturally sweet with a little mash of banana in the batter. The resulting flavor combination of chocolate and banana is pretty indulgent, but the mix of whole grain flours and minimal added saturated fat keeps them very light and airy. We love ours topped with a little more banana and maple syrup, but you could go in almost any direction, adding berries or whipped cream on top, drizzling on some warm nut butter, or even topping with a few chocolate chips.

One of my favorite things about this recipe is that it’s really versatile. If you have a food allergy or simply a dietary preference in your house, adjust these as you need. Can’t do dairy? Use almond or your favorite non-dairy milk. Kiddo allergic to eggs? See the note about substituting chia eggs. Gluten-free? The main recipe uses gluten-free buckwheat flour, but you can also use whole-wheat if you prefer.

This recipe makes enough for a small family. You candouble the batch if you are feeding more than 3 or 4. Don’tworry if you somehow wind up with leftovers. Let them cool and freeze in a zip top plastic freezer bag, layered with wax paper, and pop into the toaster for a quick weekday breakfast.

Ingredients
- 3/4 cup flour, buckwheat
- 1/4 cup cocoa powder, unsweetened
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1 tablespoon coconut oil
- 1 medium banana
- 1 teaspoon vanilla extract
- 1 large egg
- 1/2 cup milk
Instructions
Add the dry ingredients to a medium bowl.
Melt and cool coconut oil. Stir in the wet ingredients to create a thick batter.
Warm the waffle iron and cook in about 1/2-cup servings (or use the amount that works best for your machine) as directed by the manufacturer. My waffle iron has a 1-5 heat setting and I use a 4.

We really enjoyed these waffles! I substituted unsweetened applesauce for the oil (1:1) and used whole wheat flour. We served them with sliced strawberries and whipped cream, the kids didn’t even ask for syrup which they would usually have on their waffles! Thanks for a new family favourite!

My batter turned out very thick so it made fewer waffles than I expected. I’d probably up my serving size if I did it again. I think these would be great to freeze and reheat for breakfast.

I wasn’t sure what to do with the banana… Mash it and add it to the batter? So I diced it onto small chunks and added it. The batter was really thick but cooked up nice. We topped with a drizzle of honey. The kids were OK with them but I love them.

I am finishing up a program for coaching and would one day love to have my own health and wellness coaching practice with an emphasis on holistic nutrition and eating in ways to reverse and prevent disease. I have looked at many schools online to find the best school for holistic nutrition and I just get overwhelmed by how many are out there. I used the chia-seed substitute for the egg, and I found the batter was way too thick. We had to add about 1/4 cup of milk extra to get the right consistency.

Yummy! I love it with honey instead maple sirup, it’s healthy and delicious. Easy, quick recipe and the waffles comes really fluffy. 🙂

My 11 yo put these together and we served them with a raspberry sauce. Yum! The one note I have is that when making waffles (or pancakes) with the bananas, to mash them very well. If you get pieces, then the kids will think it is not done :).

really sorry wish I could have given these a good ratting but they were horrible.
my kids hated them and they are picky so… I go to take a bite and needles to say… we all ended up eating cereal.
I wish people would rate things honestly. if u have not made them do not give them a 5 * these were a huge waste of ingredients. 1 * ……..

Too dry recipe is not accurate. You need to add another half cup of milk.

Hi! This is an excellent recipe for making healthy pancakes. My kids loved them! I make it for breakfast since it hardly takes up any time to prep! I use my buckwheat flour and cacao powder from the brand Sattvic Foods. Their products are definitely quality-worthy. Definitely give them a try. Also, can I try avocado oil in place of coconut oil?
