These Hawaiian Pancakes are so fluffy, sweet and flavorful! Made with bananas and coconut and topped with a super easy to make guava jam they are going to become a staple in your brunch table.

I’m going to be honest with you, I’m pretty picky when it comes to pancakes. They are a classic dish and I love classic flavors. You know the type: Super fluffy, slightly sweet, perfect to eat with fresh fruits and jams.

I knew I wanted to create a Hawaiian inspired pancake but I couldn’t get the flavor combination right. It was too coconut-y (if that’s a thing) or too sweet or too dense. But after some tests I can finally say I found it.

These Hawaiian pancakes are A-MA-ZING. Honestly they taste like a vacation on the Big Island. They are sweet but not in an overpowering way.

The sweet coconut notes pair perfectly with the sweet and juicy banana and that quick guava jam on top?

It was a struggle not to eat it all with a spoon!

Should you let pancake batter rest?

If you want fluffy pancakes, it can help to let your pancake batter rest in the fridge for 30-60 minutes. However, it’s not vital.

Can I keep pancake batter in the fridge overnight?

You bet! If you want to save time in the morning, make this pancake batter the night before. The bonus is your pancakes will turn out lighter and fluffier!

How to Make the Perfect Hawaiian Pancakes:

1. Use Ripe Bananas

If they are not ripe, bake them, with the skin on at 180 for 15 minutes: I’m not sure if you’ve had Hawaiian bananas, but they are, simply put, the best. They are sweet and intense like no other fruit.

If you can get your hands on them, very ripe bananas will work.

However if your bananas are not totally ripe, you can bake them for a bit to bring out all the natural occurring sugars. That’s what we do for our Hawaiian banana bread recipe and it makes such a difference!

2. Add a Splash of Coconut Milk

This is what gives it the coconut flair without making them too heavy.

3. Be Generous with the Guava Jam

The guava jam is what brings this whole dish together, it’s also mind blowing good. So make a large batch, you’ll thank me later.

Guava fruit can be difficult to find in some places. So it can be frustrating when many guava jam recipes require the fresh fruit.

However you don’t need it to make this guava jam recipe. You just need some guava juice which is available at most Asian and Latin stores.

Hawaiian Pancakes Ingredients:

  • 1 Ripe banana, mashed
  • 1 ½ Cup flour
  • 2 Tsp baking powder
  • 2 Eggs
  • 1 Cup coconut milk
  • 3 Tbsp butter, melted

In a small pot over medium heat bring the guava juice to a gentle simmer. Sprinkle with the pectin and stir to combine. Let it simmer for 5 minutes stirring constantly. Remove from the heat and let it cool down completely.

In a bowl combine the banana with the eggs until evenly incorporated. Add the milk and butter and whisk to combine.

In a separate bowl mix the flour with the baking powder. Slowly pour the wet ingredients over the dry ingredients and stir until it is barely incorporated. Don’t worry if there are some small lumps left.

Heat a skillet over medium heat and brush with oil. Pour around ¼ cup batter onto the hot griddle and cook for 2 minutes. Flip and cook for 40 seconds more. Repeat the process with the rest of the batter.

Serve and top with more banana and some guava jam.
