How to Make Cranberry Orange Sourdough Star Bread

Make the Dough

In a stand mixer with paddle attachment, mix the room-temperature milk and sugar until all of the sugar is dissolved. Add the active starter, room-temperature eggs, vanilla extract, and salt. Mix until combined.

Then, add the flour and mix on medium speed until a dough forms. Leave to rest for 15 minutes.

Switch the paddle attachment to the dough hook. Knead the dough on medium speed while adding bits of the butter to the bowl at a time. Continue to knead the dough until it is smooth, elastic-looking, and pulls away from the side of the bowl, about 5-6 minutes.

Once the dough is smooth, cover the mixing bowl with a bowl cover or plastic wrap. Store in a warm environment and allow the dough to double in size for the bulk rise, about 8-12 hours. Rise times depend greatly on the temperature of your kitchen. The warmer your kitchen, the faster the dough will rise. The cooler, the opposite is true.

Prepare the filling

Place cranberries, orange juice, sugar, and spices into a medium-sized saucepan. Cook over medium heat for about 8-10 minutes, or until the cranberries have softened. Stir occasionally.

Use an immersion blender to puree the orange cranberry sauce. Continue to cook for an additional 2-3 minutes.

Remove from the heat and pour into a separate bowl. Allow to cool to room temperature before using as a filling.

Assembly

Once the dough has doubled, remove the bread dough from the bowl onto a lightly floured surface. Cut the dough into 4 equal pieces, about 260g each.

With a floured rolling pin, roll each out to a thin 10-inch circle. I like to place a 10-inch bowl on top and cut away the edge of the dough for a perfect circle shape.

Line a rimmed baking sheet with a piece of parchment paper. Place the bottom layer on the prepared baking pan.

Spread 1/4 cup of the orange cranberry sauce on top of the dough. For best results, leave 1/2 inch of the dough exposed along the edges. Continue to top with the other layers and fillings.

Place a small 3-inch bowl in the center of the dough. This will be the center of the dough. With a sharp knife or bench scraper, cut 4 evenly spaced cuts around the circle. Continue to cut until you have 16 equal strips.

Grab 2 pieces of the dough. Twist them away from each other, then crimp the edges of the dough together. Continue until 8 star points are formed.

In the meantime, preheat the oven to 350 degrees f. Prepare the egg wash by whisking together one egg and a splash of milk.

After 30 minutes, lightly coat the top of the dough with the egg wash for a beautiful golden finish.

Bake the Cranberry Orange Sourdough Star Bread for 25-30 minutes or until golden brown. Remove from the oven and cool slightly on a wire rack. Lightly dust with confectioner’s sugar and serve warm!

FAQs

What does orange juice do to sourdough? ›

Soaking them in freshly squeezed Orange juice does two things. One, this helps moisten them so they won't draw moisture out of the dough. Two, they'll be infused with orange flavor, which is exactly what we want.

What is the secret to good sourdough bread? ›

  • An active starter.
  • An autolyse.
  • A high hydration.
  • Sufficient dough strength.
  • A warm and complete bulk fermentation.
  • A long, cold proof.

What is the secret behind the sour of sourdough bread? ›

There are two main acids produced in a sourdough culture: lactic acid and acetic acid. Acetic acid, or vinegar, is the acid that gives sourdough much of its tang. Giving acetic acid-producing organisms optimal conditions to thrive and multiply will produce a more tangy finished product.

Why do you put baking soda in sourdough bread? ›

Baking soda or bicarbonate of soda can be used in sourdough bread to create a less sour loaf. Added after bulk fermentation, but before shaping, it can help to create a lighter, more fluffy loaf of sourdough.

Is milk or water better for sourdough? ›

Whole milk is best for adding to bread and sourdough because it has the highest fat content.

Why do you spray sourdough with water before baking? ›

Wetting the dough causes the surface to steam. Covering it traps the moisture. This partnership stops the bread from drying out on the surface in the hot air of the oven and forming a premature crust. Your bread rises more and produces a richer colour, becoming glossy on the surface.

What is the best flour for sourdough bread? ›

The best flour blend for creating a new sourdough starter is 50% whole-meal flour (whole wheat or whole rye) and 50% bread flour or all-purpose flour. I recommend a 50/50 mix of whole wheat flour and bread flour.

What is the healthiest flour for sourdough bread? ›

Compared to whole wheat flour, rye flour is said to be the most nutrient- and amylase-dense option for a sourdough starter. Overall, it has a lower gluten protein content than wheat flour, which means it produces slack, sticky, and dense doughs.

Why do you put honey in sourdough bread? ›

Adding honey to your sourdough starter enhances its flavour profile and infuses it with antioxidants, enzymes, and trace elements.

What flour makes sourdough more sour? ›

For more tang: Incorporate some rye flour and/or whole wheat flour early in the bread-making process, such as when feeding the mother culture and the preferment. Rye flour in particular will help your culture produce some acetic acid.

How to make sourdough more airy? ›

Accurate Fermentation

Fermentation really is the key to a more open crumb sourdough bread. You need to ensure that it isn't under fermented, nor over fermented as each of these issues will result in a more closed crumb. Ideally, you want your dough to double during bulk fermentation.

How to get more sourdough flavor? ›

Longer fermentation

When it comes time to proof your dough, the longer you proof, the more sour the dough will be. As your dough proofs, the good bacteria eats up sugars and starches in the flour. This decreases the sweet undertone and creates a more sour undertone.

What happens if no baking soda in bread? ›

Baking soda is an important ingredient in baked goods and bread. Leaving it out will change the flavor and texture of the food in an unpleasant way. While there are substitutes, if your recipe calls for baking soda, it's important to use it whenever possible.

Which is healthier, soda bread or sourdough bread? ›

Neither. Both are rather broad categories with many different recipes, so comparing nutritional content would be impossible. Sourdough bread can be made with wheat, rye, or other flours, and while traditional Irish soda bread is made with soft whole wheat flour, many recipes call for other ingredients.

Why do you add sugar to sourdough bread? ›

The yeast and bacteria in your sourdough starter actually feed off the sugar from the starches in the flour. They essentially don't need any extra food. In fact, while adding sugar to the dough may provide "fast food" for your sourdough yeast, this quick food source is unlikely to provide any protein.

Can I add orange juice to sourdough? ›

Combine the orange juice and orange zest with water to = 280g or 1 1/2 cup of liquid, combine with starter – stir until blended. Add flour – mix until blended, (no dry flour). Let rest/autolyze for 30 minutes. Add salt, fold into dough thoroughly.

Why add orange juice to bread dough? ›

Baker's Notes

Some people use orange juice, some people use water or even milk. This version, with the orange juice and honey, allows for more depth in flavor and works well with the Trailblazer flour. For more orange flavor, consider adding the orange zest, it really brightens up the bread.

Does citric acid make sourdough more sour? ›

Hack: Citric acid, ascorbic acid, and others. Like ACV, adding powdered acids can simply add sour flavor to bread.

How to use orange juice as bread improver? ›

The orange juice won't add its own flavor to the bread, but will mellow any potential bitterness in the whole wheat. If you're someone who tends to taste whole wheat as somewhat bitter, try substituting 1/4 cup of orange juice for 1/4 cup of the water in this recipe.
