When I first had a piece of chicken fresh, I was a little underwhelmed by the flavor. Perhaps it was the cornstarch that threw me off or something else I didn't do quite right. However, over the next few days of meals I ate the rest of the servings and found myself enjoying this more and more. The mushrooms and pearl onions are fantastic and while I may opt for a small change on the chicken for personal preferences, I think this is a great meal that is quick and extremely easy.

This was an excellent dish. Instead of slicing the breasts, we pounded them flat with a mallet. Other than that, we followed the recipe exactly.

I subbed white wine for brandy, since Iprefer the flavor. I alsoused flour instead of corn starch(that stuff is awful) and skipped the butter to lighten it. It was soooo good. My husband and I both loved it!

We thought this was pretty good. I didn't mess with making the cutlets, I just used the whole breast and cooked them longer, then finished them in the oven while I made the sauce. I used 1 less tablespoon of olive oil that way too. DD didn't like the pearl onions, but the flavor of the sauce was good. We had this with roasted garlic couscous and steamed spinach.

This is really good. I did not have brandy, so used marsala wine with a little balsamic vinegar. served with rice pilaf and spicy green beans. For the pearl onions, i used another reviewers suggestion and cut the ends off and boiled for 2 mins, let cool and then popped out the onion. Thanks for a wonderful way to use mushrooms.

Really liked this recipe. For me it was difficult to find the frozen pearl onions, so when I did find them I bought two bags. Used brandy the first time, and cognac the second. My husband said cognac was just really good brandy (probably more expensive, but he had it in the cabinet). I really liked it, and it was a fast dinner to put together, but it just wasn't over the top for me. I'm going to make it again, but this time I'm going to tweak it just a little.

Just finished this for dinner - really, really good! My husband scraped the pan to get all the final yummy sauce. The only changes I made were to use a Vidalia onion cut into quarters instead of pearl onion and to add minced garlic. Served with rice and green beans. I will definitely make this again.

Fantastic Recipe. I substituted a 1/4 red onion diced for the pearl onions. Yummie. Made it twice, substituted white wine the first time. Brandy is better.

This is absolutely best chicken ever. The mushrooms with pearl onions are divine. A good tip for easy peeling of the pearl onion: Slice/nip the end opposite the root and boil for 2 minutes. Once cool you just squeeze the onion out of the skin. So easy and no crying either.

This was a fabulous dish. I didn't use the pearl onion (couldn't find them) but used diced onion instead and they worked just fine. This is a keeper!

I thought this dish was kind of flavorless. It's basically a Marsala but with using a different alcohol. I prefer the sweeter, more acidic Marsala. Maybe the Brandy I bought wasn't good quality??? Won't be making this again.

Tasty and Easy to make, I used pounded chicken breast and followed the directions. Accompanied with Charred Green Beans. Sauce was great! Will make again and again.

My husband and I really liked this dish. It was very easy to put together and such a relief to not have to chop onions! I feel like I'm doing that all the time! I didn't have brandy, but used a combination of bourbon and apple juice which gave it a good flavor. I also used dried thyme which I think subs very easily for fresh. Looking forward to making this again!

This recipe is delicious with chicken and boneless pork chops. We have followed it as written and substituted some beef broth for the cognac when we had no cognac. My husband normally hates mushrooms but will eat them in this dish thanks to the sauce. This is a restaurant quality dish that you can enjoy at home! Yum...

Excellent recipe! I admit that I decreased the salt due to dietary restrictions and it would have been even better had I not done so, but this was delicious. Would definitely make for guests.

Excellent recipe as is, DON'T CHANGE ANYTHING! I have never cooked with pearl onions and that was a pleasant surprise. Once mise en place the recipe came together very quickly much like a bistro meal. Use a good VSOP brandy and give this a try!

Loved this! Really so flavorful and the pearl onions added a lot to this dish. I did not have brandy so I used marsala wine. I don't believe I missed the brandy at all :) Served this with oven roasted potatoes and roasted asparagus.

As soon as I saw this on the cover I wanted to try it, but the sauce had very little flavor, and was thin and uninteresting. Disappointing!

Made this last night for a birthday dinner. Followed the recipe and everyone LOVED it. The chicken was so tender and flavorful, and the sauce was amazing. The mushrooms and onions make the dish. An added bonus is it's really simple to put together. This one is a keeper!!!!!

I made this according to instructions. Did not get much brandy flavor from the sauce, but liked the onions, which I may add to my chicken marsala/madiera recipe if they are on hand. Thought it was OK.

This chicken was just awesome!! I used white wine instead because I did't have brandy. I didn't dredge chicken in flour because I don't like the texture, and instead of thyme I added herbs de provence. This is definitely my new favorite way to make chicken with mushrooms!! Hubby and even my 4-year old LOVED it!!

We didn't have brandy so we used white wine. Turned out much like a marsala, very good. I also brined the chicken for 45 mins with salt and water to keep it more moist. Excellent and delicious flavor.

This was great!! Hubby said it was "on the A list" & all 4 of my kids, ages 7-14, really liked it. My 7 year old especially loved the onions. I followed the recipe (doubled) pretty closely with just a few modifications. I cut the chicken smaller than indicated, used the whole package of pearl onions, used white wine instead of brandy, and added Penzey's Mural of Flavor herbal seasoning to the flour and the sauce. Served with Buttermilk Mashed Potatoes and Green Beans. Can hardly wait for the leftovers for Lunch! Yum!!

Wife says to put this one in the line-up. The brandy was more subtle than I expected, which wasn't a bad thing. I served it with Bradey Street seasoned mashed potatoes which really went well with the sauce.

I love love LOVED this recipe. Didn't have brandy so used a mixture of sherry and balsamic instead. My favorite part was the pearl onions, and the sauce! I also loved that it only required one pot on the stove top. Huge fan!

A pretty straight down the fairway chicken and mushrooms with gravy dish. Everything cooked beautifully, but it wasn't terribly exciting. I would add garlic and sub marsala for brandy.

This was the best recipe for chicken breasts I've ever made and it was super easy. The chicken was moist and tender and the sauce was delicious. I used Courvoisier and reduced it down 'til there was about 3 TBL left in the pan then added the broth - It thickened beautifully and made the whole dish. I served it with steamed fresh green beans (after all, already had the mushrooms ( used baby Bellas) and onions, and a Rice Pilaf. The only thing I might do next time is add a clove of garlic - But as it was this as absolutely delicious.

Made this as the recipes stated and it lacked the flavors I was hoping for. As our reviewers stated garlic or substituting Marsala for Brandy may make the difference. A. Little disappointed.

Fantastic flavor. Modifications I made... Pounded my chicken as we feel like it's more flavorful. And didn't have pearl onions so just chopped a regular one. Next time will try with the pearls. I served it with Parmesan polenta. My husband loved it.

I liked this recipe...made a few modifications though. Used boneless chicken thighs also sauteed garlic and shallot before adding the pearl onions and baby bella mushrooms (rather than button) and used marsala wine rather than brandy. Sauce thickened nicely. I served with garlic mashed potatoes & string beans.
