🥘 Chocolate Billionaires Ingredients
All of these ingredients can be found at your local supermarket. Feel free to customize this candy however you'd like, you could even use different nuts if you don't like pecans!
- Caramels - 14ounces ofunwrapped caramel squares or one standard-sized bag. I like Kraft brand caramels best for a creamier caramel consistency.
- Water -3tablespoons ofwater.
- Pecans - 1 ½cupsof chopped pecans.
- Rice Krispies -1cupof Kellogg's Rice Krispies cereal or puffed rice cereal.
- Chocolate Chips - 3cups ofmilk chocolate chips.
- Shortening - 1 ½teaspoon ofshortening.

🔪 How To Make Chocolate Billionaires
With only 10 minutes of cooking time, it can't get easier than making these delicious chocolate billionaires! You will need a saucepan, baking sheets, and some glass bowls (microwave-safe).
This candy recipe yields about 36 servings. There is enough to keep a dozen for yourself and gift the other two to friends, family, or coworkers!
Make the Candy Filling
- Prep. To begin, prepare 2 baking sheets by lining them with parchment paper (or wax paper that has been greased).
- Heat caramels. Add your 4 ounces of caramels and 3 tablespoons of water to a large saucepan and place it over low heat.
- Melt caramels. Cook, occasionally stirring until the caramels have melted and the mixture is smooth.
- Add ingredients. Gently stir in the 1 cup of Rice Krispies and 1 ½ cups of chopped pecans until well combined.
- Chill candy. Drop rounded teaspoons of the mixture onto the prepared baking sheets. Transfer the baking sheet to the refrigerator and allow them to chill for 10 minutes.
Make the Chocolate Coating
- Combine the chocolate coating ingredients. Meanwhile, combine 3 cups of chocolate chips and 1 ½ teaspoons of shortening in a microwave-safe bowl.
- Microwave chocolate. Microwave the chocolate for 30 seconds and then stir. Continue to heat the chocolate in 15-second increments, stirring in between each one, until melted and smooth.
- Cover candy with chocolate. Remove the chilled candy from the fridge and dip each ball into the melted chocolate, using a fork to flip the candy over, making sure to coat the candy entirely. Then, place the chocolate-coated balls back onto the baking sheet.
- Set chocolate. Place the baking sheets back into the refrigerator until the chocolate has set.
Chocolate billionaires would make a wonderful addition to any sort of gift basket for sharing! Serve along with other festive treats like my reindeer chow and chocolate frosting fudge! Enjoy!

- While a teaspoon may seem like a small amount, it is really all you need for each candy. Once you dunk them in the chocolate, they will get larger. You can use a small cookie scoop or melon baller for easy scooping!

- If you want more Rice Krispies than pecans, you can swap the amount and use 1½ cups of Rice Krispies and 1 cup of pecans. Feel free to adjust the amounts to your liking, as long as they total 2½ cups between the two of them.
- I recommend using a high-quality brand for your chocolate chips, like Ghirardelli.

Keep your chocolate billionaires in an airtight container at room temperature for up to 5 days.
These candies can be frozen in a freezer-safe bag for up to 1 month. Simply allow them to defrost before enjoying them.

❓ FAQ
Can I Use A Different Nut To Make Chocolate Billionaires?
Absolutely! Peanuts, cashews, walnuts, or macadamia nuts would be delicious too if you are not a fan of pecans or have an allergy. You may leave them whole or chop any of the nuts that you choose!
Can I Use Other Chocolate To Make Chocolate Billionaires?
Yes! This recipe calls for milk chocolate chips, but you could use dark chocolate or white chocolate chips if you prefer. If you have some chocolate melting discs on hand you could use those too!
Can You Freeze Chocolate Billionaires?
Yes, you can! Store any extra billionaires in a plastic Ziploc storage bag for up to 1 month. Make sure to defrost in the fridge before serving.

Hi, I'd love to make these for Christmas &, as I am in Australia, we don't have Kraft caramels . Are the caramels soft or hard n crunchy as we have different versions? Could I use eating chocolate too as our chocolate chips here taste waxy? TaReply

You'll want the soft caramels. For the chocolate, i would opt for bakers chocolate bars if available. Eating chocolate tends to be milk chocolate, so if that's what you can get look for 70% cocao chocolate. Good luck and let me know if you have any other questions!
