Baked Cheesy Mashed Potato Bites Recipe (2)

What is more comforting than mashed potatoes? How about Baked Mashed Potatoes loaded with cheese and broccoli, and baked into delicious mashed potato bites that have kids happily eating their vegetables for dinner? My whole family loves these mashed potato bites. I love that they are ready in about 30 minutes and are a nutritious side dish to just about any dinner.

And if you happen to be looking for something fun to serve for St. Patrick’s Day, these definitely bit the bill.

Not many were more proud of their Irish heritage than my mother-in-law. She was a huge fan of all that is Irish, from being an active member of the local Irish club to attending monthly Irish dancing lessons.

Every St. Patrick’s Day the whole family would attend an Irish Mass followed by a brunch she helped organize. There are 6 children in my husband’s family, along with spouses and grandchildren. We had a group of 25 in attendance supporting her every year.

During the brunch, there was Irish singing, dancing, and lots of Irish food served. It was a memorable way to celebrate St. Patrick’s Day to say the least. My mother-in-law is no longer with us, and how I miss her and our “Irish Grandma.”

As a way to continue her love of the Irish, every St. Paddy’s day I try to make the day fun for my kids. For more fun St. Patrick’s Day Ideas, check out these recipes.

Nutrition Tip: Roast russet potatoes, [skin on!], with a bit of olive oil and rosemary for a delicious side dish that is filled with more potassium than a banana.

This year Baked Mashed Potato Bites will be on the menu. They fit for a few reasons:

  1. They have a hint of green – the celebratory color of St. Paddy’s Day!
  2. What’s more Irish than potatoes?

Can you freeze Mashed Potato Bites?

Yes! Which is great since they are already in individual servings, make an extra batch and you can pull them out as needed. To freeze our baked cheesy mashed potato bites wrap each serving in press n seal or plastic wrap (we prefer press n seal) and place them into resealable, freezer-safe plastic bags. When you are ready to enjoy them, allow them to thaw overnight if possible, otherwise pop them in the microwave on the defrost setting.

I hope you and your kids enjoy these easy cheesy broccoli mashed potato bites as much as mine do.

Good morning LouLou! No, I’m sorry, our recipes don’t switch to grams, but I did a quick search and it looks as though 1/2 cup is 100 grams. I hope that helps! And, Yes they can be frozen! Why do people add sour cream to mashed potatoes? ›

Sour cream adds a little bit of tangy flavor and a boost of richness to mashed potatoes. It's a fun change from the standard milk or cream and butter combo usually flavoring mashed taters. You can even try your hand at making homemade sour cream from heavy cream!

Why soak potatoes before cooking mashed potatoes? ›

Soaking potatoes in water helps remove excess starch. Excess starch can inhibit the potatoes from cooking evenly as well as creating a gummy or sticky texture on the outside of your potatoes. Cold water is used because hot water would react with the starch activating it, making it harder to separate from the potatoes.

Why do restaurant mashed potatoes taste better? ›

Whereas most home cooks will use a pinch of butter, a couple of shakes of salt, and a bit of milk, steakhouse chefs aren't afraid to go all out with the dairy. There's no room for 2% or even whole milk in their mashed potatoes — the thinness of plain milk just isn't creamy enough to cut it. And creaminess is key!

Is it better to use milk or heavy cream in mashed potatoes? ›

Heavy cream will make for the creamiest mashed potatoes, but whole milk or half and half will also work. Don't use anything with less fat than whole milk, otherwise, your potatoes won't be as flavorful or creamy.

What ruins mashed potatoes? ›

Soupy, watery mashed potatoes usually happen because the cooked potatoes were cut into pieces that were too small, weren't drained well enough, or were overcooked.

What does Rachael Ray use to mash potatoes? ›

Mash potatoes with half-and-half or milk using a potato masher. Add in the cream cheese and smash until the cheese melts into the potatoes. Add chives or scallions. Season with salt and pepper, to your taste.

What is the purpose of putting an egg in mashed potatoes? ›

Adding egg yolks to a pot of mashed potatoes is an easy, dairy-free texture and taste upgrade that doesn't require any special techniques. The yolks harbor all the flavorful fats and emulsifying components and will thus effectively unify the fat and water in potatoes, translating to a smoother, uniformly creamy pot.

Why do you put vinegar in mashed potatoes? ›

The addition of a mildly acidic vinegar to a starchy veggie like potatoes not only deepens the flavor profile, but it also helps to tenderize the tubers.

Why do you put hot milk in mashed potatoes? ›

For the very best result every time, always gently warm the butter and milk before adding to the potatoes, rather than adding cold dairy straight from the fridge. Here's why: Warm dairy is absorbed faster and more easily, with less stirring than its cold counterpart.

What is the 1 ingredient upgrade for the fluffiest mashed potatoes? ›

The secret ingredient is just ice-cold water.

You soak the potatoes in iced water before they are cooked. This eliminates much of the starches in the potatoes, resulting in a super light and fluffy mash. It's also like when you make rice.

Is it better to cut potatoes before boiling for mashed potatoes? ›

Drop a whole russet into the pot and by the time the outside has cooked through, the inside will still be raw. Larger potatoes should be cubed to ensure they cook evenly (peeled first if desired). Smaller potatoes tend to have thin skins and can be boiled whole, no peeling required.

How many potatoes per person for mashed potatoes? ›

Serving Size: As a side dish, you should plan on ½ pound of potatoes per person. That means if you are planning on 10 people, use 5 pounds of potatoes. 4 people, use 2 pounds of potatoes. To freeze leftover mashed potatoes, allow them to cool then place them in a freezer-safe bag.

Why use cream cheese in mashed potatoes? ›

The high fat content in the cream cheese will meld with the butter and milk to make the potatoes perfectly fluffy and creamy.

What makes a better mashed potato? ›

Unsalted butter – For richness and buttery flavor. Milk – It smooths the starchy potatoes into an incredibly creamy mash. Use whole milk for the creamiest results. Sour cream – Technically, this ingredient is optional.

Is cream cheese a good substitute for sour cream? ›

Fresh, spreadable cheeses like cream cheese and mascarpone generally work well as 1:1 substitutes for sour cream in baking. Be sure to let them warm up to room temperature before using, and thin them out slightly by stirring in milk or lemon juice to get a similar texture.
