Ingredients you need for the Honey Balsamic Roasted Carrots
10 medium carrots, rinsed and halved lengthwise2 cloves garlic, grated2 tablespoons honey2 tablespoons balsamic vinegar1 tablespoon olive oilFew sprigs fresh thymeFresh parsley, finely choppedSalt and fresh cracked pepper, to taste
Directions
1.To make this oven roasted carrot recipe, preheat your oven to 375ºF (190ºC). In a bowl, mix garlic, honey, balsamic vinegar, olive oil, salt and pepper to taste.
2. In a rimmed bakingsheet, combine carrots, thyme and 3/4 of your glaze. Coat the carrots as evenly as possible. Roast for 15-20 minutes, until the carrots start to caramelize.
3.Remove thebaking sheet from the oven, flip the carrots and pour over the rest of the glaze. Return to the oven until nicely browned and sticky, approx 15-20 minutes more, depending on the size of the carrots.
4. Serve the roasted carrots with a dash of any leftover glaze from the pan, and a sprinkle of fresh thyme. Enjoy!
Notes
- Always halve the carrots unless they’re very small. If you have large carrots, feel free to quarter them. In any case, try and make sure they’re all similar in size so they cook evenly.
- Peel the carrots or don’t peel the carrots—it’s up to you.

How to buy carrots
When buying carrots at the grocery store or farmer market, look for carrots that are uniform in color and whose skin is smooth with no cracks. The carrots may be slightly green at the crown but a dark coloring tells that the carrots are getting old. When selecting carrots that have the stems attached, check for those that have fresh-looking greens. Discard carrots that have started to sprout, that have soft spots, and any that have become limp.
How and how long to store carrots
If stored properly, you can keep carrots in the refrigerator for up to a month. Wrap the carrots in a paper towel and then place them in a bag in the refrigerator to avoid condensation from forming. Be careful because excess moisture will cause carrots to rot. Carrots can also be peeled, cut up, blanched, and then frozen in Ziploc bag. You can preserve them for approximately a year using this method.
How to Prepare Carrots for Cooking
Carrots are available all year long at your grocery store. The first step in learning how to cook carrots in the oven, stovetop, orslow cookeris knowing how to prep them. For four servings of carrots, you can count on one pound (450g) of fresh carrots.
- Make sure to wash carrots thoroughly under cool running water. Use a soft brush to remove any dirt that stuck on the root.
- When ready to cook, peel or scrub the carrots and trim the stem and root end. Some recipes call for cooking carrots whole, you can keep some of the stems for a pretty presentation. In this case, cut stems to 1 inchand wash thoroughly.
